Type of Gin:

Beefeater

- First produced in 1820
- Distributed in UK.
-"Beefeater" refers to the Yeoman Warders who are the ceremonial guards of the Tower of London.

Martini : Dirty Martini


a Classic Martini
called dirty because use olive brine which adds a more olive flavoring than the straight Martini with olives soaking in it.
easily ruined if use too much olive brine

Ingredients:
2 1/2 oz gin
1/2 oz dry vermouth
olive brine to taste
olive for garnish

Preparation:
Pour the gin and dry vermouth into a mixing glass.
Slowly add the olive brine.
Stir.
Strain into a chilled cocktail glass.
Garnish with the olive.

Martini: 50-50


Use an equal amount of gin and dry vermouth.

Ingredients:
2 oz gin
2 oz dry vermouth
olive for garnish

Preparation:
Pour the ingredients into a cocktail shaker with ice cubes.
Stir well.
Strain into a chilled cocktail glass.
Garnish with the olive.

Choices to make a Martini:

gin or vodka
little or no vermouth
stirred or shaken
an olive or lemon twist garnish


Ingredients:
2 1/2 oz gin
1/2 oz dry vermouth
1 green olive or lemon twist for garnish
orange or Angostura bitters (optional)


Preparation:
Pour ingredients into a mixing glass filled with ice cubes.
Stir for 30 seconds.
Strain into a chilled cocktail glass.
Add a dash of orange or Angostura bitters if desired.
Garnish with the olive or lemon twist.


Variations of classic martini:

Dry Martini - use little or no vermouth. (Traditionally uses more dry vermouth).
Bone Dry/Desert Martini - No vermouth.
Gibson - Garnish with a cocktail onion.
Perfect Martini - Use equal parts of sweet and dry vermouth.
Dirty Martini - Add a small amount of olive brine.
50-50 - Use equal parts of gin and dry vermouth.
Vodka Martini - Replace gin with vodka.

Shake vs Stir


We shake when:



Ingredients include fruit juices, cream liqueurs, simple syrup, sour mix, egg, dairy or any other thick or flavorful mixers.
Create a cloudy, effervescent look of drink, clean up in few minutes.

Chocolate Martini, Cosmopolitan, Mai Tai, New Orleans Fizz, Ward Eight


We stir(搅拌) when:



Ingredient has distilled spirits or very light mixers only.
more gentle technique.
to combine drinks with a perfect amount of dilution.
Many gin and whiskey cocktails are stirred due to shaking will "bruise" the spirit.

Cocktails Glassware

1. Cocktail / Martini Glass*

conical shape.
used by Martinis, other classic cocktails and neat drinks that are between 3 and 6 ounces.


2. Highball Glass*

large tumblers that hold between 8 and 12 ounces.can replace a Collins glass. for mixed drinks that have a high proportion of mixer to liquor, example: scotch and soda, bourbon and water, etc.
Example:
Highballs, Bloody Mary, Other tall drinks, Beer, Soda


3. Old-fashioned / Lowball / Rock Glass*

squat tumbler that holds between 5 and 10 ounces.
for short mixed drinks and anything on the rocks.
Example:
Black and White Russians, Old-fashioneds, Mai Tais, "On the Rocks" drinks


4. Champagne Flute*

tall, thin, tapered glass that holds between 7 and 11 ounces
The flute design (less surface expose to air) is to keep the bubbles in the flute longer.
Example:
Champagne Cocktails, Champagne


5. Collins glass

optional addition to the home bar, can interchangeable with the highball glass.
primarily for Collins drink.

6. Irish Coffee Glass

can replaces the average mug for good-looking hot cocktails.
This footed glass mug holds between 8 and 12 ounces and is made of heat-resistant(耐热) glass.

Mint Julep / 明特朱利普


Introduction:



Famous in horse racing ppl.
Traditional drink of the Kentucky Derby
Traditionally served in silver or pewter cups,held by the handle or rim in order for the cup to obtain optimum frost.
Slow sipping is the appropriate way to imbibe.


Ingredients:

4-5 mint sprigs.

2 sugar cubes or 1/2 oz simple syrup.

2 1/2 oz bourbon.

Garnish : mint sprig.


Preparation:

Place the mint and simple syrup or sugar into a julep cup, collins glass or double old-fashioned glass.
Muddle well to dissolve the sugar and to release the oil and aroma of the mint.
Add bourbon.
Fill with crushed ice and stir well until the glass becomes frosty.
Garnish with mint sprig.

5 steps for better Cocktails

1. Buy better liquid
Liquid relect the quality of cocktails.

2. Use Fresh Ingredient
Choose fresh ingredient (fruits etc.) instead of canned or bottled.

3. Match Glass Temperature with Drink
Make cold drink - glass put in freezer or pour cold water. (prevent drinks get warm soon)
Make Hot drink (Hot Toddy) - put hot water in glass while prepare ingredient. (slow down drinks get cold)

4. Use Garnishes
Purpose: add addition flavor and balance
Example:
A Gin and Tonic must have lime.
Subtle citrus and a Martini without the olives lacks the soft brine flavor.

5. Measuring
Use a jigger to measure quantity of ingredient needed.

How to shake:

Insert Ice cubes then liqiuds. (more cool)
5-6 cubes per drink, if 2 drinks use less cube.
Give room to shaker.
shake vigorously around 10 times.(shake longer if hv hard ingredient)
Shake frozen or blended drinks like daiquiris and coladas with crushed ice.
After shake, just add fruit in glass.
